Pizza, sweets, ceviche and more. Union Hall names food hall offerings

It’s the moment our palates have been waiting for, the reveal of the eateries moving into Union Hall, Waco’s first food hall.

Union Hall, at the corner of 8th and Franklin, will be home to a slew of eateries and more, all under one roof. Union Hall is scheduled to open its doors this summer.

The vendor list so far includes a good mix of food styles as well as new concepts and some Waco favorites.

One food hall vendor is a name folks will recognize. Capt. Billy Whizzbang’s has been serving Waco burgers since 1977.

“We’re excited about having him downtown,” said Jonathan Garza, with Turner Behringer, the Union Hall developers.

The Castillo family, owners of longtime Waco favorite La Fiesta Restaurant and Cantina, will be opening a bar in the food hall as well as a separate booth featuring street tacos.

KurbSide Coffee, out of Mexia, will meet the food hall’s caffeinated needs, brewing coffee from downtown roaster Apex Coffee Roasters. A booth called Around the World will serve desserts from across the globe. Waldy’s Pizza World will be slinging high end pizza including some unexpected flavor combos. And Ceviche del Mar will offer the seafood specialty the name suggests.

The food hall will also be home to a high end meat market that will additionally carry some fresh produce, dairy and other staples.

Garza said the hall is about 70 percent filled but there are still some important slots available, such as the big space on the corner of 8th and Franklin.

“We’ve put that off because we want to make sure we have the right concept,” he said.

Garza said the Turner Behringer team set vendor mix goals with the help of food hall experts before they ever started leasing. On top of wanting diverse offerings that would make Union Hall stand out in Waco, they also wanted to find tenants who would be open to collaborating with other tenants in the food hall and be into creating a community among the eateries.

“It’s been exciting for us to have the ability to find the perfect mix,” he said.

Tenant build-outs should start in the next month, Garza said.
